I am trying really hard to use up odds and ends in my pantry and freezer. It really bothers me when there is a little of this and a little of that hanging around.
What I did is not the complete recipe, but actually an adaptation of my own recipe. I didn’t want to go buy anything, but rather use up what I had. So, I will give the full recipe and then at the end tell you what I did. Either way, it’s tasty and perfect for using up leftover taco meat.
Tex-Mex Taco Salad
1 lb ground beef
1 pkg taco seasoning
1/2-1 lb cheddar cheese, grated
2 (15oz) cans ranch style beans, drained and rinsed
3/4 bottle French dressing
chopped onion, to taste
1 lg head of lettuce, chopped
1-2 tomatoes, chopped
1 sml bag Doritos (slightly crushed)
Brown and drain ground beef. Season with taco seasoning according to package directions. Remove from heat. Add drained beans, dressing, and onions. Stir to mix. Chill.
Add cheese when cool. Just before serving, add lettuce, tomatoes, and Doritos. Mix together and serve.
*Perfect on a hot summer night. Also good without meat for a side salad or lighter supper.
**For my leftover version: I used leftover taco meat from the freezer, 1 can of pinto beans (drained and rinsed), French dressing (whatever was in the bottle), a little onion, no tomato, a handful of cheese, and a little lettuce. I don’t crush my chips…I use them like a spoon and eat the salad with the chips. I really used up a ton of odds and ends with this one.
