Great post. My kids love to help me make strawberry jam. After a few years of training, they really make quick work of the fruit prep. I use Pamona’s Pectin to make jams- it does not keep the color as nice as the pink sure jel box, but it doesn’t require as much sugar. I do think if you reduce the sugar too much you may have to water bath can it though. I usually just follow the recipe and flip the jars. They stay good for about 12-18 mo. I don’t usually let them go past 2 years.
