Dining at the Fairmont Princess

Last month, my family had the privilege of staying at the Fairmont Princess Resort in Scottsdale, AZ.  The resort is absolutely breath taking.  It was the last weekend of the summer season, so we were able to take advantage of all the festivities that weekend.  I’m so excited to go back next summer for another staycation, but I hope you will consider hanging out here if you are ever in town…yes, it was that nice!

Before I got y’all excited about the food, there are other great reasons to stay here.  There is:

  • a catch and release fishing pond
  • a professional golf course (The Phoenix Open takes place here)
  • a zipline
  • a spa (I took advantage of this on my own and asked to go back for my bday)
  • swimming pools
  • waterslides
  • clubhouse for the kids
  • dining
  • shopping
  • tennis
  • fireworks on the weekends during the summer

We swam all day both days and took advantage of one of the cabanas…a must in Arizona in the summer.  The kids loved having a safe, shaded place to hang out when they needed a break.  And the hotel set up a huge BBQ pit both days and grilled up some burgers and dogs for Labor Day.  I don’t need to tell you how awesome the smell of burgers cooking on the grill smells while you’re hanging out in the pool!  Oh my goodness….it was so good and they had all the picnic fixin’s too.  No need to change out your swimsuit, just walk up, order, and eat!  That was such a brilliant idea!

On our last day, my oldest took advantage of Bobcat Billy’s Clubhouse.  She had a ton of fun playing games and making craft project and just hanging out with other kids her age.  Hubbyman took the little guy fishing and I checked out the spa services.  Everyone had a great time and I came back super relaxed.  The spa services were a little pricey, but I’m worth it every once in a while, right?!?!?

One of the highlights was dinner at La Hacienda!  The food was amazing!  How about instead of a lot of talking…how about I just show you in pictures.  ”Dine amid warm, Spanish architecture, wood-beamed ceilings, flagstone and beehive fireplaces, all accented by modern urban touches, new upholstery, lighting fixtures and a stunning main entrance showcasing the restaurant’s tequila bar.”

Dining at Fleming’s

Hubbyman and I recently had a lovely date night at Fleming’s Prime Steakhouse and Wine Bar.  We have two young kids, so date nights are few and far between for us.  We called up the grandparents and made plans for our evening out.

We had the most incredible meal.   We really wanted a sample of everything, but we took it easy and started of with the French Onion Soup and Fresh Mozerella & Sweet Tomato Salad.  I have such a great hubbyman.  He always lets us sample each other’s dishes.  That way we can try more than just what we ordered.

For dinner we both ordered the filet mignon. It really is one of the best steaks I’ve ever eaten.  And the sides are AMAZING.  I don’t think words can do them justice.  We splurged and got sides…probably a bit of overkill for the two of us, but so worth it.  We had the Fleming’s Potatoes which is their house specialty made with cream, jalapeños, and cheddar cheese (I made my own knock off version…close, but the original are soooo good) and we also had the Chipotle Cheddar Mac & Cheese.  It’s made with smoked cheddar and leeks.

Dinner ended with a scrumptious Chocolate Lava Cake and a cup of coffee.  Oh Yeah!  It was such a rich chocolate cake with a molten chocolate center, served with vanilla ice cream, chopped pistachios, and a bowl of whipped cream!  I was so bummed that the dinner was over, but it was such a fantastic meal with wonderful company.

The reason for our visit to Fleming’s last week was so that I could share their wonderful news!  After four years, Fleming’s announced that they will be opening a new restaurant. In Beverly Hills…this coming November!  The 7,200 square foot restaurant will seat 250 guests and will feature a two story all-glass wine room, a second story mezzanine dining room and an exterior patio marked by a dramatic soaring floor-to-ceiling glass window allowing passers-by to view inside.

Fleming’s is recognized as a popular neighborhood gathering spot throughout the United States, featuring superior cuisine and an incomparable wine list with more than 100 wines by the glass.

Skip Fox, the company’s president says, “It will be a world-class restaurant, fit for a world-class community.”   You’ll find the newest location at 252 N. Beverly Drive between Dayton Way and Wilshire Blvd. in Beverly Hills.

Feed Your Dreams Exhibition

Monday night, I was able to attend the Feed Your Dreams event hosted by Beckett’s Table, a local restaurant here in Phoenix.  The event was held at the beautiful AZ Science Center in downtown Phoenix.

Feed Your Dreams was a contest to find the next great idea that merged food and science (totally right up my alley).  The event started off with a cocktail reception where the 6 finalists set up displays and talked to us about their ideas.  Some had samples, but every one of the finalists had a great idea!  Three of the six were new ideas on how to grow produce organically.

Following the reception, was a five course meal from Beckett’s Table with presentations by each of the finalists.  The judges choose the first place winner, but those of us at the exhibition were able to vote on 2nd place and 3rd place was decided by facebook viewers.

So, the food was AMAZING and meeting the innovators was exciting, but I really want to share the winner’s idea with you.  I think it was exceptional and could have huge impacts on the way we garden at home and would also allow restaurants to grow their own food in their parking lot if they want.

The winner’s are Bruce & Tina Leadbetter from Stone Hoe Gardens.  Stone Hoe Gardens is an organic farm that grows produce  by taking food waste from restaurants and stores and making it into a paste.  Then by adding water it is formed into a liquid and pumped into nylon socks filled with coco-peat and earth worms.  The earth worms then eat the peat and paste.  The waste from the worms creates a super nutrient rich soil.  This  “uber soil” is used to grow wonderful local produce and vegetables.

IHOP: A Trio of Signature Pancakes

Have you been to IHOP recently?

IHOP is known for their classic buttermilk pancakes, but they are on a mission to continually reinvent the American breakfast experience and has come up with three signature pancake creations.



  • Whole Wheat Pancakes with Banana: Wholesome and lightly sweet, fluffy whole wheat pancakes topped with fresh sliced bananas. (These are part of the SIMPLE & FIT under 600 calorie menu.)
  • Red Velvet Pancakes: Rich chocolaty red velvet pancakes, drizzled with cream cheese icing, a dusting of powdered sugar and crowned with whipped topping.
  • Sweet Strawberry Pancakes: Our fluffy famous buttermilk pancakes crowned with cool strawberries in a glaze, drizzled with cream cheese icing and crowned with whipped topping.


My family agreed that even though we LOVED the Sweet Strawberry Pancakes…they were too sweet for breakfast.  I think secretly, they were everyone’s favorite.  However, everyone devoured the whole wheat pancakes with the banana slices.  There were fights at the table over who got the banana.  We should have asked for more.



I was actually surprised with a price starting at $4.99 that the pancakes also came with your choice of eggs and meat.  I don’t think any of the combinations were more than $6.  The breakfast was, of course, very filling and easy on our budget.  It was nice to see IHOP coming up with some new ideas and breaking out of the routine!

Dining at Hard Rock Cafe

I have been collecting little teddy bears from Hard Rock Cafe for as long as I can remember.  Hubbyman will make special trips while on business to get me a bear…isn’t he sweet!  I married good!!!!  We have a Hard Rock Cafe near us, it’s about 20 miles and in downtown Phoenix…so we usually only go for a quick supper when we are going to an event nearby.

A couple days ago, we headed down there to try some of their new dishes.  I’m so glad we did, despite a little parking issue.  Apparently, if you go during an event you have to pay for parking $8-$12.  No validation!  YIKES!  But now we know for the future.   Even though we were a little frustrated with the parking situation we had a fabulous meal.

The Texan Sandwich

I ordered The Texan Sandwich (of course, I did…I’m a Texan).  I devoured that sandwich so fast….oh my goodness…chipotle and hickory Bar-B-Que sauce, cheddar cheese, crispy jalapenos and crunchy onions….what could be better.  I can’t guarantee it, but the BBQ sauce tasted like it had a little Frank’s Red Hot Sauce in it.  YUM!  I think I was the first at the table to finish, usually I’m the last because I’m dealing with the kids, helping them eat, etc.

Hubbyman had the Shang Hi Sandwich, it has an award-winning Asian 5-spice Bar-B-Que sauce with homemade Asian style pickled cucumbers and sriracha mayonnaise drizzle.  He said it was very tasty and enjoyed the twist of flavors in the BBQ sauce.  He finished a close second behind me, licking his fingers (don’t tell him I said that…I will deny it).  Hubbyman said he would definitely order it again.

We really enjoyed the new menu items and can’t wait to go again.

Dining at Westin Kierland

I love staycations…ya know, where you stay close to home for a vacation.  My family recently spent Mother’s Day weekend at the Westin Kierland Resort & Spa in Scottsdale, AZ.   There are so many wonderful things to say about Westin Kierland that I broke this post up into two different reviews.  For all the fun activities and family time we had, please check out my post on East Valley Mom Guide.  We are in the middle of a week long series of staycation posts for the Phoenix area on EVMG.

But here on AMFT, I have all the mouth watering food pictures and details.  If that doesn’t make you want to jump in your car or grab a flight, then I don’t know what will.  LOL!   I think we were totally spoiled rotten by all the good food…there is no way I can compete here at home.

When we first arrived, we were greeted with this beautiful basket of fresh fruit, cheeses, and crackers along with some awesome cookies for the kids.  It was perfect because it was snack time and the kids were getting restless as I settled the family into our casita.

I think that basket was bigger than my son!

Supper the first night was at Waltz & Weiser Whiskey Bar & Cantina out in Dreamweaver’s Canyon.  The sunset view was amazing!  Despite the name “Bar & Cantina” it was totally kid friendly outside.  While we ate, we were lucky enough to taken in the nightly serenade of Scottish Bagpipes at sunset.  The kids were super impressed.  Clockwise from top right: Bagpipes, Green Chili Pork Carnita Tacos, Rio Grande Beef Nachos, and Green Chili con Queso.

The meat in these dishes melted in our mouths…I think the beef on the nachos was my favorite it had tons of flavor and cooked to perfection.  The tacos, while absolutely amazing, were very small.  That made us savor every.single.bite.  And I was totally happy with those bites.  The Chili on Queso was probably everyone’s favorite!  In fact, it got the attention of a few of the neighboring tables….we had a mini-throw down with the table next to use for our dip.  Okay, really the waiter almost delivered our plate to their table, but we quickly fixed that and then the other table ordered their own.

One of the highlights was the nightly Hershey’s Sweet Shoppe Dessert Bar pop-up.  In the lobby the most decant and beautiful desserts are brought out for everyone to enjoy.  I took a picture of a few of these tasty treats.  Not only are they beautiful, they tasted wonderful as well.  We let the kids pick out whatever they wanted….they thought they were in heaven.  We never do that!   And that Banana Cake in the top left corner was A.M.A.Z.I.N.G!  It was so moist and filled with wonderful banana goodness.  I almost went back to pick up a 2nd piece to bring home.

The second night, Hubbyman and I enjoyed a romatic dinner all alone while Kaylynn was at the Digital Kids Club.  Gavin was too young, so Janice at Celebrating Family and her hubbyman watched Gavin during our supper.  Check out her review for lots of family fun activities at the Westin!  Thanks Janice!

deseo’s inventive concept and menu development are inspired by the James Beard Award-winning Chef Douglas Rodriguez, widely-regarded as the inventor of Nuevo Latino Cuisine.  There is an artist in the lobby of the restaurant painting.  How cool is that?!?!  You can even buy the paintings.   deseo is a very modern and clean looking…the perfect spot for a date night too!  The food….hmmm….what can I say about the food?  I don’t think words can describe how amazing the dishes were.  But our favorites were our appetizer and my dessert (hubbyman’s dessert was good too, but mine was unbelievable).

Clockwise from Top Left: Shrimp Chicharron (a little sweet and a little spicy, cooked perfectly…I might have asked to marry this dish about half way through), chocolate cigar, us at supper,  cinnamon tapioca (the cinnamon stick is smoking when it’s brought to the table….it really set the mood for dessert) and finally the beef tenderloin “churrasco style” !  We both were so happy with supper and wished we could eat like this every night!

Our last meal was breakfast on Mother’s Day at Brittlebush Bar & Grill.  My only complaint for this staycation was the lack of signs to show the way to this restaurant.  We wandered for a while before finding it in the Golf Clubhouse.  So glad we found it!  We had great service and an excellent breakfast.  Kaylynn had the yogurt and granola, Gavin picked the multigrain waffles, I had the Scottish Scones, and hubbyman ordered the Short Rib Hash.

My scones were perfect!  They were so good that I had to try to create them at home the following week.  What to see my Bacon & Cheddar Scone creation?  They were almost as tasty then the ones I had here.  Here’s a little teaser:

Dining at Bass Pro

Did you know that Bass Pro has a ton of great food?!?!?  We ate at their restaurant when it first opened many years and enjoyed it but hadn’t been back.  However, we are constantly buying fudge and some of their prepacked food items.

I recently had the chance to eat in the restaurant again and really enjoyed the food!  I was really adventurous and tried the alligator, which wasn’t bad.  But I can’t stop thinking about the bread that was brought to the table while we waited.  It was served warm and the top of the bread had a delicious sugar crust.  The bread itself wasn’t sweet, but the crunchy sugar topping was so good.  I’m going to have to try doing that with some of my bread.  It really sets their bread apart from bread at other places…if it wasn’t inappropriate I would have picked up all the sugar chunks off the table to eat, but I did try to remember the manners that my mother taught me.

Since it was lunchtime and I’m trying to make better choices I ordered the Islamorada Salad which is mixed greens with candied cashews, bleu cheese and dried cranberries tossed with raspberry vinaigrette dressing.  I was pleasantly surprised at the quality of the salad.  I figured it would be good but it had the perfect balance of all the flavors and of course I’m a fan of any salad that isn’t filled with iceberg lettuce.

If you haven’t had the chance to dine at one of Bass Pro’s restaurants give it a try next time you are heading out to the store.  I’m not sure if all are decorated the same, but a 13,00 gallon aquarium of beautiful and brightly colored tropical salt water fish is one of the main attractions and totally different from the fresh water fish displayed throughout the store.  If you don’t have time for a full meal, try the Fudge shop.  Our shop makes their own fudge in store and even takes flavor inspiration from the customers and other employees.

Dining at La Jolla Shores Hotel

For the second half of our trip we traveled up the coast about 30 minutes from Coronado to La Jolla.  We’ve only been to La Jolla once for lunch and the aquarium, so we were really excited to spend a couple days there.  La Jolla Shores Hotel graciously offered to host our stay and let us sample their wonderful food at The Shores Restaurant.

La Jolla Shores Hotel is located on the beach with beautiful views of the Pacific Ocean.  The hotel is perfect for families, surfers, scuba divers, snorkelers, and anyone who wants a relaxing vacation.  The ocean area near the hotel has reefs perfect for exploring and a city playground is within walking distance for when the little ones got restless.

After we checked in and made it to our room, we were greeted with a wonderful afternoon snack of cheese, fruit, and desserts.   The kids were impressed with the desserts and fruit.   The chef made a simple fruit platter look so beautiful.

 We were able to enjoy three meals at The Shores Restaurant during our stay.  One thing that makes it so special is the remarkable view of the beach and ocean.  While the restaurant is mostly inside the entire west wall is all window and there is not a bad table in the whole place.  All you can see is ocean!  During supper, we watched the sunset and during breakfast we watched the birds and dolphins playing in the water.  I’ve never had two more better behaved kids than when we ate there….they were fascinated by the view as well.

The menu was created by award-winning Executive Chef Bernard Guillas and Chef de Cuisine Amy DiBiase.  Our favorite dish of our entire was from The Shores Restaurant.  We had it the first night and then ordered it for room service (along with a pizza) the second night….yes, it was that good!   The Humbolt Fog Macaroni Gratin is to die for!  I begged and pleaded for the recipe, but it was new to the menu and no one would give it to me….I will be trying to figure it out.  It was basically a mac & cheese made with a CA goat cheese.  Our other favorites from were the 1855 Angus New York Strip Steak and the Crispy Skin Salmon.  Our favorites from breakfast were the Chilaquiles and the Biscuit and Gravy.  Oh that gravy…I have cravings for that pork sausage gravy.

So what’s a trip to San Diego without a day at SeaWorld.  We always go for at least one day when in town.  I love the whales and my kids do to.  My dream was to be a marine biologist, but that didn’t work out…so I visit the dophins and whales when I can.

There is so much to do at SeaWorld that we can never do it all, but some of my favorite things to do are the behind the scenes tour and Dine with Shamu.  If you can do more than one day, then you have to add these in to your schedule.  There are usually several behind the scenes tours to pick from and well worth it.  However, my all time favorite thing is Dine with Shamu!  We never miss it.


Even though SeaWorld has some of the better theme park food, Dine with Shamu food is even better.  My favorites are the black and white pasta (think Shamu colors) and of course the Shamu cookie.  But there is an entire buffet of freshly prepared foods from pasta to seafood to rice and beef.  There is a carving station and an entire table of kid favorites like hot dogs and mac & cheese.  I feel I might be ratting myself out here, but the desert spread is really fantastic!  Cookies, cakes, cheesecakes, and more!!!  The food is wonderful, but I haven’t even gotten to the best part….

It’s not called Dine with Shamu for nothing…the dining tables are outside surrounding the whale pool and one whale joins you for lunch.  On our day, Ulises, was our guest of honor.  The seats are so close to the tank that just a piece of plexiglass and a tiny walkway for the trainers separates you from the whale.  It’s amazing to be this close to these giant whales and watching how graceful he was in the water.  My pictures below are not zoomed in at all…we were really this close.
