Our lemon tree produces a TON of lemons every year, so I’ve always have a ton to use up.  The lemon season is almost over and the lemons aren’t the greatest right now, so I had to rethink my party punch.  Despite the lemons only being for looks in this punch I think my Pineapple Lemonade Punch turned out great.

Only 3 ingredients come together for this kid friendly party punch.  Do you make punch for your gatherings?  My mom used to make punch for all of our parties.  I loved having something special..more than just a juice box or a can of soda.  Of course my mom would serve it in a giant punch bowl.  I have a giant bunch bowl buried in my closet somewhere, but I bought a drink dispenser from Costco last year and I love it!  It’s perfect for all sorts of drinks or even just water.  It’s pretty and less messy than a traditional punch bowl.  I’m all about less mess. LOL!

This Pineapple Lemonade Punch is very crisp and refreshing… perfect for a baby shower, kids party, or for any reason!

Pineapple Lemonade Punch

2 cups CountryTime Lemonade mix
1 (64oz) bottle Pineapple Juice, chilled
3/4 of a 2 Liter bottle of Sprite, chilled
2 cups cold water
lemon slices and ice (opt)

Combine all ingredients together in a large punch bowl. Add lemon slices and ice. Serve!

Monster Truck Birthday Party

Yesterday, was my son’s 3rd birthday and we celebrated with a Monster Truck Party. He is into everything Monster Trucks, so I knew he would just love this party!  A friend of mine is wizard on Photoshop and she made invitations that looked like a ticket to a Monster Truck show.  She also sews and made the cute Monster Truck shirt that Gavin is wearing!

Since this is a food site, let’s start there!  LOL!  Hubbyman was out of the country, so I was on my own for the party and all the preparations.  I took a few short cuts, but I think it turned out cute anyway.  Sandwiches with checkered flags, Energy Bite licorice sticks, Mud Shots (crushed oreos, chocolate pudding, and an oreo on top), chips and salsa, and individual veggie cups!

I first saw these individual veggie cups on Pinterest a while ago and then Janice over at Celebrating Family had them at her daughter’s party last year.  They are super fun and easy.  Just put some dressing in the bottom of a little cup and fill with chopped veggies.  EASY!

Monster Truck Birthday Cake

Well, the cake is not my best work at all!  I spent 6 hours the day before the party in the hospital with the little man.  So my time to make the cake was shortened from an all day activity to an hour before the party.  I made a chocolate cake with chocolate buttercream frosting.  The “dirt” is crushed graham crackers with a little cocoa powder added to darken it up.  The dirt ramps are actually large blocks of fondant covered in frosting/dirt.  And of course, the monster trucks and cars!  Don’t forget to wash the cars before placing them on the cake.  I “drove” the trucks over parts of the cake to give it the look that it was actually a used MT course.

I decorated with red and black and strung up a checkered flag banner around 3 sides of the ramada.  The kids went to “body shop” for temporary tattoos and MT coloring pages.  But mostly they just ran around and played on the playground.  The kids all went home with a goodie bag filled with a monster truck, tattoos, a curly straw, and more!

IKEA: Crayfish Party

Ever been to IKEA!  It’s a destination for us…when we go we spend half the day there and of course always grab some meatballs for lunch or some cinnamon rolls for breakfast the next morning.

Last week, I was invited to attend an event at IKEA.  I didn’t realize IKEA had events, much less, a really tasty one like this.  IKEA hosts 4 Sweedish Buffets each year.  And let me tell you, they know how to feed you right!  I had no idea what to expect, so when I arrived and saw plates spilling over with food and crayfish (or as I call them crawdads!), I was shocked.  Apparently, it was an all you can eat crayfish supper! And there was so much more than crayfish.  They had salads, fish sauces, salads, egg dishes, Sweedish crackers, and a fabulous dessert table!

Even though I grew up in the South and fished for crawdads growing up, I had never eaten one.  Well, that changed last week!  They were so good.  It reminded me of something else I have had before, but I couldn’t quite place it.  And no, I was not brave enough to suck the brains….let’s save that adventure for another day! And those little hard boiled eggs with shrimp…were to -die-for.  I could have eaten the whole platter!

The really cool thing was that this was a family event.  Kids were totally welcome; they had a craft station set up for them.  And a DJ!  I was able to let the rest of my family pop in for a minute to try some crawfish and the kids crafts.  I think they were jealous that I got do that while they shopped.  Next time, they are coming with me the whole time!

So, IKEA throws these parties 4 times a year and all the IKEA’s do them!  There will be the Julbord Holiday Buffet in December; Easter Buffet in March 2012; Midsummer Buffet in June 2012; and the Crayfish Party in August 2012.  Follow your local store on twitter, listen for their in-store announcements, or check out your local store’s website for more details.  There is a cost to attend, but it is really reasonable.  I think the Holiday Buffet is like $10 for adults (kids are less).

 I love a good egg casserole for breakfast or brunch.  I’ve had a few good ones, a few that were just okay, and a ton of not so good ones.  I haven’t been able to find a good recipe, so I decided to just come up with my own.  I’ve been playing around with variations of this one and I think I finally have it.  I’m not saying it’s perfect, but it’s really good.  And honestly, it really isn’t that spicy.

Yesterday, I hosted a Ladies Brunch.  Eggland’s Best provided my guests and I some eggs, other goodies, and a great reason to get together.  We had a lot of egg dishes and tasty food!  And, of course, I shared this recipe with everyone.  I have pictures and recipes for all the other wonderful dishes that were brought, so look for those over the next couple weeks.

There were 9 moms and 12 kids in my little house and I couldn’t have asked for a better crowd!  Everyone shared their favorite way to enjoy eggs.  How do you like YOUR eggs?  Here’s the run down from everyone at brunch:

Vanilla Bean Cake with Strawberry Cream Filling

My daughter isn’t too picky in terms of cake.  Cake is cake for her….she will eat any cake you put in front of her.  So I knew for her birthday cake I could get creative and she wouldn’t mind.

Everyone really enjoyed the cake, it had a subtle vanilla flavor and was super moist.  It was really good the first day, but sitting in the fridge for a day or two made it a little drier and denser.  It was still really good, especially since scratch cakes are usually dense to begin with because of the lack of chemicals making it super light and airy.  If I could have left it out of the fridge there wouldn’t have been a change; however, with the strawberry cream filling it needed to stay cold.  And of course it was like 113 degrees outside so the fridge kept the frosting from falling off.

Vanilla Bean Cake with Strawberry Cream Filling

2 sticks butter, softened
3 ½ cups sugar
1 ½ vanilla beans
4 egg whites plus 2 whole eggs
2 tbsl baking powder
2 cups half and half
4 cups flour

Preheat oven to 350 degrees.  Cream butter and sugar together. Split vanilla beans down the center and scrape out all the seeds.  Add to mixture.  Add eggs/whites one at a time, mixing well between each addition.  Combine dry ingredients in a small bowl and mix well.  Add dry ingredients to butter mixture alternating with the half and half.  Mix well between each addition, but do not over mix.

Prepare cake pans with flour and shortening and fill about 1/2 full.  Bake for 35-45 minutes (start checking around 30 minutes).  Cake is done when toothpick inserted into the middle comes out clean.  Cool on wire rack.  Remove cake from pan and frost when completely cool.

Note: as written, this recipe makes enough for a 10 inch round, 2-8 inch rounds, and a couple cupcakes.  If you wish to make a regular size cake (2-8 inch round pans), then you will need to halve the recipe.

Strawberry Cream Filling

2 parts Strawberry Jam
1 part buttercream frosting

Mix the two together and spread between the layers of cake.
**Use the best jam (not jelly) you can find.  It really does make a difference.**

Vanilla Buttercream

1 cup  butter, softened
1 Cup Shortening
4 tbls warm water (4 to 6)
2 tsps clear vanilla extract
1  2-lb bag confectioners sugar

Beat together butter, shortening, 2 tbsp. of the warm water, and vanilla  until smooth and creamy. Beat in the sugar gradually on a low setting. Scrape sides of bowl as needed. Mixture will be very thick. After all sugar is incorporated, add 2-4 more tbsp. of warm water and beat at medium/medium-high speed for 1-2 more minutes.

Adding more warm water will continue to thin the frosting consistency and bring down the sweetness even more. Add as much as you like to get the appropriate flavor and consistency. Be careful because a little goes a long way.

This can also be made several days in advance and stored in an airtight container in the fridge.  Bring to room temp, then mix well before using.  Leftovers should be refrigerated.

Please bear with me.  Yesterday, I messed up my shoulder trying to catch my son who was falling to the tile floor from his chair.  In his two year old way, he was standing in the chair and as I told him to sit on his tooshie, he picked up his foot and pushed off the table.  I reach to grab for him, the chair, anything, but I couldn’t catch him.  He hit the floor with his head and bit his tongue.   And some how in the process I pulled something in my shoulder…so it hurts really bad as I sit here typing.

Back to the punch, my 7 year old daughter named the punch (even though it was not pink, it had to fit the theme of the Pink and Green party).  A basic punch is so easy to make and you are only limited by your imagination and your flavor preferences.

Sprite

Combine equal parts of  juice and sprite just prior to party in a punch bowl.  To keep it from getting watered down, make ice cubes out of the juice a couple days before and add to the punch.

Last weekend was my daughter’s 7th birthday party.   She decided on all the party details and picked the pink and green birthday party and since it is really, really hot here in August my daughter requested a swimming party.  I think it turned out really cute.  My daughter even asked her Nana (my mom) to make her a swimsuit cover-up to match.

We had simple sandwiches, chips, potato salad, and watermelon.  The kids all got beach towels as party favors and little boxes that had pink and green candies.  I let my birthday girl help pick out the centerpiece feathers and also the candies.  What fun is a party if the birthday child can’t help in the planning?!?!

I made the cake, but we had a mishap with the “7″ and so it was a little unstable on the cake and started to lean, but we made it work.  I think the party was a hit and the kids LOVED getting a towel as a party favor.  It really didn’t cost any more than putting together a goody bag filled with junky toys.

As you know, I had a few friends over last weekend and we had wine and lots of yummy food.  Well, I decided to have a cheese tasting competition.  I wanted to know if real sliced cheese actually tasted better than processed cheese slices.  I know, sounds silly, but I had to know what everyone thought of the difference between the two.
