Steak Tampico--copycat recipe

You know me…I love to recreate our favorite restaurant dishes at home.  This is a recreation of one of my favorites from a local Mexican joint.  I used to get it all the time..when it was like $12, but times have changed and prices gone up and I can’t stand paying almost $20 for a small steak covered in a tasty cheese sauce.  When I first tried out this recipe, hubbyman and I were so excited…it was almost exactly the same.

You have to get over the fact that there is Velveeta in this.  Trust me…if you order any sort of cheese dip at a restaurant then they use Velveeta.  Even in-house made mac and cheese in most restaurants use it.  There is a time and place for everything and this is Velveeta’s time!

This recipe really is so easy.  It’s all about the ratio of cheese and chiles that makes it scrumptious.  I realize that it seems like cheese dip, but the high amount of chilies to cheese makes the chili flavor really shine through.  I used my own roasted chiles, but feel free to use a can of diced roasted green chiles.

One thing I hate doing in the kitchen is chopping garlic.  I don’t have the patience, I know…silly, right!?  I hate how small it is, I hate the lingering smell on my hands, well…you get the point.  I’ve used prechopped garlic, grated garlic, a garlic press, but this fun gadget from Joie is one of the most useful little gadgets I’ve tried in a long time.  If you just need a rough chop of a couple cloves then this is your tool.  Even my 8yo can do it!

Steak Tampico

4 steaks, grilled to perfection
8 oz Velveeta
4 oz diced roasted green chiles
1 clove garlic, minced

Melt Velveeta, chiles, and garlic in a glass bowl in the microwave for one minute. Stir. Then continue heating in 30 second intervals until the cheese is melted and everything is combined.

Smother your perfectly cooked steak!

One of my new favorite foods are sun-dried tomatoes!  They are so good.  I’ve put them on cheese platters, in pasta sauce, with crackers for lunch, and now on a steak!

Where have these been hiding all my life!  I blame my parents!  LOL!  Okay, not really, but seriously….why did it take me 30 years to discover how wonderful they are.

Mooney Farms sent me a wonderful box of their sun-dried tomatoes….I did a little happy dance that day.  Did you see it?  If you didn’t, it’s because you aren’t connected with me on Instagram….my other new love!

We were on a mini-vacation last weekend in the mountains…it was 40 degrees cooler than it was here in Phoenix!

Hanging out at the top of Sunrise Ski Resort…at the very tip top!  Yes we have ski slopes in AZ!  The monsoon rains came in full force…luckily I was a prepared mommy and pulled out the panchos to save the day!  LOL!

Anyway, I took up some of my goodies with some steaks and started playing around!  The steaks were simply seasoned with salt and pepper before grilling and then topped with this wonderful compound butter.  It added so much flavor and some extra fat (I had some lean steaks).  Have you ever made a compound butter?  They are so easy and are a wonderful addition to meats, veggies, desserts…whatever floats your boat.

Sun-Dried Tomato & Garlic Compound Butter

Sun-Dried Tomato & Garlic Compound Butter

1 stick (1/2 cup) butter, softened
2 tbls roughly chopped sun-dried tomatoes in olive oil
1 tsp finely minced garlic
1 tsp finely minced fresh basil
1/8 tsp salt
plastic wrap

In a small bowl, combine all ingredients until well combined.

Layout at 6-10 inch long piece of plastic wrap and scoop butter out of bowl into the center of plastic wrap. Roll up plastic wrap, forcing the butter into a log shape. Twist over ends to shut. Place in freezer for several hours or the refrigerator for 8-12 hours to firm.

If frozen, allow it to thaw in the fridge until ready to use. Add to pasta, burgers, steaks, rolls, etc.

This is my all-time favorite salad!  Isn’t it beautiful…I think that is partly what makes it my favorite.  It is absolutely perfect for the hot summer nights when you don’t want to turn on the stove.  Fire up the grill instead and chop the veggies…you are going to LOVE this.

This is the way I like it, but you can easily substitute your favorites in this salad.  Swap the feta for blue cheese.  Hate black olives?  Add in artichokes.  Make it your own…or try it my way.

3 lb flank steak (3 to 4)
1 small bottle fat free Italian dressing (~8oz) divided
1 head lettuce, shredded
2 tomatoes, cubed
1 cucumber, seeded and cubed
1 small can sliced black olives
1 red onion, diced
1 small container feta cheese
croutons or other salad toppings

Marinate steak in half of the Italian dressing for 6-8 hours in a ziptop baggie.  Keep in the fridge while marinating.   Cook steak on the grill until it’s reached desired doneness.

Meanwhile, assemble the salad on 4 plates, with the lettuce on bottom.  Sprinkle each salad with ¼ container of feta and ¼ remaining dressing.

I came up with this really fast one evening.  I didn’t want to cook, I wanted to go out…but the kids just were not up for it.  So, I thought about it and realized most steak houses use butter when they cook their steaks to make them really rich, shiny, and juicy.

This really turned an ordinary steak into a fancy supper.  It was excellent and took very little extra effort.  I got my “dining out” flavors for less money, hassle, and time.

Steak with a Garlic Butter Sauce

2 steaks of choice (1/2lb each)

course kosher salt, pepper (or steak seasoning)

1 stick of butter

4 cloves of garlic, finely diced

Season steaks well.  Cook on a med-high grill for 4-5 mins per side or until they reach your desired doneness.

Meanwhile, melt butter with garlic in a small saucepan.  Do not allow the butter to come to a boil, but let the garlic flavor the butter as it heats up.

After you let your steak rest, slice it thin, and drizzle garlic butter over the top.
