Interesting.  I asked when we were there for full ingredients as it was a gluten allergy.  They assured me no flour.  No matter what....my copycat version is super close to what we had at Legoland.  Gluten Free and Delicious!  w-]]></description>

					<description><![CDATA[Though I worked in food service, often in front of a deep fryer, throughout my high school and college years, thank goodness for my waistline, it never crossed my mind that you could deep fry foods at home. Just recently I was gifted a nice electric deep fryer and memories of those years in food service came rushing back. Perhaps I should mention WHERE I worked: Legoland California. I used to love it whenever I was asked to fill in at Granny’s Apple Fries, because it was my favorite treat in the park (and it was easy). I wanted to recreate these fries for my family, who had never tried them, which led me here. Though the recipe was not hard at all I was/am foggy on a couple details. The recipe you have here is accurate, but it’s missing a step or two. I am 100% certain that the apple fries made two trips through the fryer. The first dunk was shorter and at a lower temperature. I even remember that the primary shop employees called it blanching, which I thought involved water,  not oil. In any case, after that first brief fry, the apples would cool (I am a bit hazy here, but I think refrigerators were usually involved but if we were too busy a batch may not make it into the fridge. Finally, the cooled, blanched apples were fried a second time at a higher temp, giving them a lovely outer crunch that contested a much softer interior. The one part of the process that I’m most unsure of is whether or not the fries were re-coated in anything after being blanched and cooled. I want to say we did and that it was flour or something other than the initial cornstarch. Now it really bugs me, so I’m determined to figure out the answer. Thank you for this recipe! I’m going to test this one out for sure.]]></description>
