These are delicious! I used coconut oil instead of butter for more coconut flavor and AP flour instead of oat flour. I think next time I will lightly toast the coconut before mixing it in to make the coconut less..chewy? Very yummy I will make these again 🙂

These are amazing and I love that the recipe is halved so I don’t over indulge too much! I’m using these as lactation cookies to help my supply, if I can keep my husband away from them!

Hi Julie…thanks for stopping by. 🙂 I use Ener-G as my egg replacer. I haven’t had any problems with it yet. Let me know how the cookies turn out for you. 🙂

Hi Wendy, I just saw these awesome looking cookies on the Earth Balance website–quick question, what exactly did you use for your egg replacer for this batch? Because they look so great! I eat a plant-based diet and my baked goods are not exactly successful. I’ve used flax eggs and Ener-G egg replacer and things come out flat…I also use Earth Balance so it could be something I’m doing there with temperature of the sticks…any advice/tips? Thanks so much!!!

As I’ve made diet changes because of allergies I’ve tried a lot of recipes out…this is one of my faves! My friends love them, too, & better still their kids ask for them…thanks!
