A friend from Italy made Arborio rice with sautéed scallops and shrimp. He lightly sautés his rice in the olive oil before adding the broth/water to cook. He says the light toasting adds much to the flavor. I’m planning to use your recipe with the sautéing method tonight for dinner. Yummmm!
