I subbed olive oil for butter only bc I was out, used about 1/2 the sugar (always do that) and doubled the spices and mango. I’m also in the tropics with 1000 mangos this month. The crispy edges were like candy and the middles chewy… Maybe the cornstarch does this? They were epic! Thanks so much.

Hi Wendy, I’m searching for a good mango oatmeal cookies recipe & yours looks good & easy to make. I love to bake & I’ve been making oatmeal with cran-raisins & golden raisins which my family & friends love. Our mangoes are in season now here in Guam (in the pacific) and I have mango trees all around us so I have enough to test with or play around with. We’re having a mango festival here 6/7/2014 where everyone makes all kinds of goodies: mango pie, mango tea, mango smoothie, mango jam with chili, mango donuts, etc. I’m going to try making your recipe….looks great although I’ve never used corn starch. So how is the texture with cornstarch…is it flaky? We’ll see . I’m thinking of joining the dessert contest with mango bread/cookies. I’ve made mango pancakes,mango upside down cake & they are delicioius! So wish me luck!.Thanks again..I enjoy your website.

I just made some!!!!!! There are delicious! I also did the GF flour and oil instead of eggs and butter.. and I still love them! I live in Costa Rica so I used really fresh mangoes :). Thanks so much for sharing the recipe!
