i am so very excited to make these ! i am a samoa fanatic, the word diet does not exist when it comes to those cookies. I usually never eat any cupcake i make entirely, but i feel it would be love at first bite & i will devour them all. thank you for the recipe!

I made these today for my husband’s birthday. Labor intensive, but he loved them! In the recipe, you say to use the frosting while it is still warm. How did you get yours stiff enough to pipe a swirly on the cupcake in the picture? Also, my frosting was darker than the picture; more of a true caramel color. I added about 4-1/2 c powdered sugar and didn’t want to add any more, for fear of it being too sugary.
I normally use organic chocolate syrup but I had to use Hershey’s. I am not a fan. Would try again with my organic choc syrup or make a milk chocolate ganache to combine with the coconut in the filling. Overall, an awesome cupcake! Thank you for the recipe.
