This Crunchy Fall Salad is a refreshing fall salad for the holidays that’s been tossed in an unbelieveale Pumpkin Vinaigrette.

Crunchy Fall Salad with Pumpkin Vinaigrette

The end of the year is now fast approaching, which means it’s time for all things fudge, peppermint, pumpkin, and cranberry. This fall salad combines two of my favorite fall flavors pumpkin and cranberries. Swap out traditional salad oil for a more fall flavor with pumpkin seed oil.

If you have never heard of pumpkin seed oil, you must hunt down a bottle at a nearby health food store or high end grocery store. It will be well worth your time. Plus, the addition of the crunchy sweet apple and creamy tangy goat cheese makes salad one I crave all year long.

Fall Salad with Apples & Cranberries

This Apple Cranberry Pecan Salad is hearty enough for a meatless Monday meal or an easy side dish with some grilled salmon or chicken, but fancy enough to make an appearance on your holiday table.

It’s the perfect fall salad because of the the all the fall ingredients like ripe apples, pecans, and cranberries.  I decided to use dried cranberries for a change in texture and because they are sweeter; however, feel free to use fresh cranberries if you prefer.

How to Make a Fall Salad

Y’all…this is Crunchy Fall Salad is so easy to make and it has so much flavor.  There is very little chopping too…just the apples and red onions need chopping.  Everything else is just dumped in.  Just throw it all in a big bowl and put all the dressing ingredients in a mason jar, shake, pour, and toss!  DONE!

It’s colorful, full of different flavors and textures, plus it’s easy, so there really is no excuse to make it.  Don’t skimp on the salad dressing, it really makes the salad but in a pinch just use a good Extra Virgin Olive Oil in its place.  You probably already have all the dressing ingredients in your pantry except for the pumpkin seed oil, just splurge and get it.  You’ll love it!

Crunchy Fall Salad with Pumpkin Vinaigrette

Yield: 4-6 servings
Prep Time: 15 minutes
Total Time: 15 minutes

This Crunchy Fall Salad is a refreshing fall salad for the holidays that's been tossed in an unbelieveale Pumpkin Vinaigrette.

Ingredients

  • 1/2 cup pumpkin seed oil
  • 2 tablespoons balsamic vinegar
  • 1-2 teaspoons sugar
  • salt and pepper
  • 5 cups mixed greens
  • 1/2 red onion, thinly sliced
  • 2 oz goat cheese, crumbled
  • 2 small apples, cored and diced
  • 1/2 cup pecans
  • 1/2 cup dried cranberries

Instructions

  1. Combine pumpkin seed oil, vinegar, sugar, salt & pepper in a mason jar. Screw on lid and shake well to combine. Adjust sugar, salt, & pepper to taste. Set aside.
  2. In a large bowl, toss together remaining ingredients. Drizzle with vinaigrette and toss one last time (you might not use all the dressing).

Notes

Use pumpkin seed oil if you can find it. It provides a wonderful flavor and perfect for fall. If you can't find it (usually at high end or natural grocery stores), then substitute with good quality extra virgin olive oil.
