Angel Food Cake with Pomegranate Glaze

My birthday was last month and Hubbyman always bakes my favorite cake…angel food cake. I think it’s ironic that since I love baking and decorating cakes that my favorite is the simplest of them all.

This year he tried something new and it was tasty. Hubbyman had a little trouble with the cake…it fell while it was cooling. I don’t care, I would happily eat the entire thing if someone had a problem with it.

Hubbyman is not happy that I’m sharing a picture of his cake, but I just love the colors and I loved my birthday cake.

Angel Food Cake with Pomegranate Glaze
1 box of angel food cake, prepared as directed on the box
2 pomegranates, seeded
2 cups powdered sugar
1 tsp pure vanilla or orange extract

After preparing and baking cake per instructions on the box allow the cake to cool completely. Juice the seeds of one pomegranate (run them through a juicer, mash them and strain the juice, or roll the pomegranate on the counter while pressing down…cut in half and then squeeze the juice through a fine strainer). Combine juice, extract, and powdered sugar and mix until it is thin and will nicely drizzle over the cake. Drizzle it all over the cake. Sprinkle cake with remaining seeds.

**Note: when we tasted this, it was great. However the glaze needed something, so I’ve added it to the recipe already here. The powdered sugar flavor overpowered the pomegranate flavor. I think the vanilla or orange would be a nice complement and help tone down the powdered sugar flavor.**

Hubbyman surprized me with a lunch date sans the kids. It was a total surprise since we hadn’t been out alone since little man was born 18 months ago. He took me to Benihana, a place I’d always wanted to try.
