My kids go crazy for macaroni and cheese. They prefer homemade, but let’s be honest, they will eat just about any mac & cheese that is put in front of them. It’s pretty much a staple in our house and our go-to quick fix supper for the kids and hubbyman. However, hubbyman is not a huge fan of plain ol’ mac & cheese. So I started thinking about what his favorite foods are and then it hit me..buffalo wings. Why not turn his bowl of mac and cheese into Buffalo Chicken Macaroni and Cheese. {And keep reading for all the other great 15 Minute Macaroni & Cheese recipes today, plus a giveaway!}

I prefer to make mac & cheese from scratch, but when I’m really in a hurry I just use a box mix. I’m picky about the brand I buy an probably not the one you are thinking of, but just pick one that you and your family like best. Then grab all your favorite wing fixin’s…chicken, hot sauce, celery, blue cheese…it’s all good!

There were no complaints from Hubbyman the night I made this for him and it didn’t take any longer than making a box of regular macaroni and cheese. Dressed up mac & cheese for the adults in about 15 minutes! Love it!

Buffalo Chicken Macaroni and Cheese #15MinuteSuppers

Buffalo Chicken Macaroni and Cheese

Yield: 4 servings
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Buffalo chicken macaroni and cheese takes your favorite mac and cheese and kicks it up with the flavors of Buffalo chicken.

Ingredients

  • 1 box macaroni and cheese (prepared as directed)
  • blue cheese crumbles
  • 1 chicken breast, grilled (leftovers or store bought)
  • 1 stalk celery, chopped
  • 1/4 cup Frank's Red Hot Sauce

Instructions

  1. Prepare macaroni and cheese according to package instructions. While water is boiling, chop celery and chicken.
  2. Roughly dice chicken breast. Heat chicken in microwave safe bowl for 1 minute, then add about 1/4 cup hot sauce and heat an additional 15-30 seconds or until chicken is warmed.
  3. When macaroni and cheese is prepared, stir in about 1 tbls of blue cheese crumbles to the pot until melted. Add in chicken and top with celery and additional blue cheese.

    Some of my most enjoyable time is in the kitchen cooking dinner but that is only when I have time to sit and enjoy it. When I am hungry and tired, bring on the 15 minute meals! They are way better than the 1 minute cereal bowl.

    The recipe seems okay. I admit, I’m more of a cook from scratch kind of guy than a zap it in the microwave. I do like the idea of quick meals tho. If you’re in a hurry, and need to eat, something like this would work.

    I think the 15 minute supper movement is great because there are many people out there who feel they don’t have enough time to cook a great meal for their family. However, most people can take 15 minutes to prepare a meal and it will also save them money if they’re ordering take out because they believe it is quicker.

    Macaroni and cheese is always a favorite at our home and always appears at our thanksgiving table. This recipe rocks.

    My family is not really a fan of blue cheese but I love the idea of adding chicken pieces and celery to mac and cheese for a little something extra!
