Roasted Peas with Garlic & Feta

Peas are one of my favorite side dishes. I make them all the time, but usually I just heat them up with a little butter and a pinch of Kosher salt. But these pan roasted peas might just be my new favorite way to serve them. Adding a little garlic while cooking and topping with some creamy feta as they come off the heat made the perfect side dish for a busy school night.

I thought life would settle down as the kids got older, but I think things have gotten crazier. Our weeknights are so busy that I don’t even have a moment to think. As soon as I pick my kids up from school, it’s go time! Tutoring, Church, Homework…lots and lots of homework. Every day is different, but every day is crazy. Needless to say, I’ve had some issues getting a decent supper on the table.

Easy Weeknight Dinner Solutions

I meet my husband once a month or so for lunch and we usually end up strolling the aisles of the Whole Foods by his work. We found Barber Foods Signature Recipe stuffed chicken breasts and I just knew they would make the perfect easy and convenient weeknight dinner solution for my busy family.

The stuffed chicken breasts come in a bunch of flavors, but my family really enjoys the Cordon Bleu, Broccoli Cheddar, Kiev, and Crème Brie. They are so easy, convenient, and require no prep work. Just bake and eat!

While my chicken breasts cooked, I whipped up this easy side dish with frozen peas, garlic, and some feta I had hanging out in my fridge. Such an easy meal for nights that I just don’t have time to devote to cooking supper.

The Barber Foods Signature Recipe stuffed chicken breasts cooked up beautifully and the portion size was perfect for my growing teen and starving husband. Adding in a quick home cooked side dish to these delicious chicken breasts made me feel good about feeding my family. It took less time to cook up this supper then it would have taken to grab takeout.

Roasted Peas with Garlic and Feta

Yield: 6 servings
Prep Time: 15 minutes
Active Time: 30 minutes
Total Time: 45 minutes

Roasted Peas with Garlic & Feta is a quick, easy, and delicious side dish.  The sweet flavor of the peas goes nicely with the tangy feta and roasting them just takes the peas to a whole other level.

Ingredients

  • 2 bags (10-12 oz each) frozen peas, thawed
  • 1 tablespoons extra virgin olive oil
  • 1/2 teaspoon coarse Kosher salt
  • 1/4 teaspoon black pepper
  • 6 garlic cloves, finely minced
  • 1/2 cup crumbled feta cheese

Instructions

  1. Preheat oven to 375 degrees.
  2. Put the peas on a rimmed baking sheet and pour the oil over the top. Add the garlic and toss to coat the peas.
  3. Roast for 30-35 minutes, toss once halfway through cooking.
  4. Sprinkle with feta cheese and transfer to a serving platter.

    I’ve never thought to roast peas before, but garlic and feta are always staple ingredients in my refrigerator. I’m always needing an easy veggie side dish, and my whole family loves this!
