I know what y’all are thinking…strawberry and white chocolate cookies?!?!?! Trust me, they are a fun cookie flavor and the light blush pink color is so fun. 

Cake mix cookies are so easy to throw together without a lot of fuss. My teenager actually loves to make them since she can be creative and not worry too much about all the measuring involved with traditional homemade cookies. 

When cake mixes are on sale, I stock up on various flavors so we can make cookies at any time for dessert or last minute potlucks and parties. Now, I love making cookies from scratch but sometimes I don’t have time and that’s why cake mix cookies are my go-to.

Strawberry Flavored Cookies

These easy strawberry cookies have become a family favorite. We’ve been trying every cake mix flavor we can find and they are all great, but these strawberry flavored cookies are so pretty that everyone wants to cookie or two.

How to make Strawberry Chocolate Chip Cookies

Strawberry Chocolate Chips Cookies would be a fun variety, simply swap the white chocolate chips for semi-sweet chocolate chips (or my favorite would be dark chocolate chips). It would be reminiscent of chocolate covered strawberries which are always a hit.

Cake Mix Cookies

Keep cake mix cookies soft by not overbaking them. This is true for any cookie actually. When baking, remove the cookies from the oven while the center is soft, but the edges are set.

Cake Mix cookies usually don’t last long in my house, but they can be stored in an airtight container for about a week if needed.

Strawberry and White Chocolate Cookies

Yield: 24 cookies
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

These uniquely flavored Strawberry and White Chocolate Cookies have only 4 ingredients and are ready in no time at all.  

Ingredients

  • 1 box strawberry cake mix (dry)
  • 2 eggs
  • 1/3 cup of oil
  • 1 cup white chocolate chips

Instructions

Preheat the oven to 375 degrees and spray a sheet pan with non stick cooking spray.

Combine cake mix, eggs, and oil in a large bowl. Batter will be thick. Gently mix in white chocolate chips. Spoon into small balls, place on cookie sheets leaving about 2 inches between cookies.

Bake for 8 to 10 minutes until cookies brown slightly on the edges. Store in an airtight container for up to a week.

    I would have loved to see the inside of the cookie for the texture. I have never ever heard of using cake mix for a cookie dough before! Thanks so much for sharing this idea, which is great for a great impromptu baking session for kids.
