This week was my daughter’s first week back at school and as you can imagine it’s been a mad house in the mornings here. Like total insanity! Half the time last year, I didn’t have time to make myself a breakfast and would grab a cup of coffee as I ran out the door to take my daughter to school. This year I vow to be better to myself and have a better breakfast. I need to think up more easy meals for me and my family, don’t I.

Nestle challenged me to create a quick and easy breakfast solution using a couple of the Nestle Meal Solutions products. Well, I went a bit overboard and created this Coconut Cream Blended Coffee Breakfast using three of my family’s favorite Nestle products.

What I especially love about this super quick and easy blended coffee is that it really is a complete breakfast since I used a vanilla instant breakfast packet too. I know….this is starting to sound strange but I promise I’ve gotten two thumbs up from everyone who has tried it. The other totally awesome thing is that you can dirty up only the blender but feed everyone in the family with this tasty drink.

Make one for the kids sans coffee before they run out the door for school and then quickly blend up a second batch for the coffee fans in the family. It’s the perfect breakfast for hectic school mornings.

Coconut Creme Blended Coffee Breakfast

Yield: 1
Prep Time: 5 minutes
Total Time: 5 minutes

Thanks to Carnation Instant Breakfast, this blended coffee drink makes a great start to the day!

Ingredients

  • 3/4 cup milk
  • 1/4 cup Coconut Creme Coffee-mate
  • 1 packet Carnation Instant Breakfast Classic French Vanilla flavor
  • 1 1/2 tsps Nescafe Instant Coffee granules
  • 1 tbls ground flax seed
  • 1/2 cup ice

Instructions

  1. Combine all ingredients in a blender and process until smooth and creamy.
  2. If you want to really be indulgent, top with whipped cream and shredded coconut.

    Flax seeds make this a healthy drink and I like the Coconut creamer in this drink. I would like to make this. It looks like a fun and delicious drink.

    This looks absolutely *amazing*!!! I love how you combined all the different Nestle products into a blended coffee drink that looks totally decadent but it actually an entire breakfast replacement–so clever!
