The Guacamole that Changed my Life

Have you noticed the lack of avocado in my recipes?  That’s because I hate them…well…stay tuned to see if that’s changed with this recipe.  I live in AZ and there is no lack of avocados, guacamole, and Mexican food.  However, John loves Loves LOVES guacamole and avocados.  His love, rather my hatred, has been the source of many jokes by family and friends for years.

Last week at Camp Blogaway, I met Mimi Avocado.  She is the sweetest lady and I had a chance to chat with her for a little while at camp.  She has a blog and as her name suggests…she has an avocado ranch in Southern CA.  I can’t wait to go visit her, she’s only a 6 hour drive from me!!!!  Of course, the conversation quickly turned to my hatred of avocados and she said that maybe I just hadn’t had a good one.  Lucky for me, she brought a huge basket of avocados to camp (thanks to CA Avocados Direct).  I reluctantly took several and she promised that they would be perfectly ripe by the end of the week.

So, John was super excited that I had promised to actually do something with the avocados.  And I agreed to make him some guacamole.  Sigh…what was I thinking.  I’ve been stressing over it all week.  I started thinking about it a lot….and thought IF I like guacamole what would I want in it?

John, my taste tester, fell in love with me again after tasting my new recipe…it had been too long since I made those fabulous cupcakes.  LOL!  He gave me the eye and said this probably the best guacamole he had ever tasted.  SHOCKING!  I’ve never met an avocado or guacamole recipe that I liked nor had I ever made it.  I promise this wasn’t the “nice husband” face…but the real HOLY COW, “that’s awesome” face!

So, I bet you are wondering what I thought?!?!?

Well…..I LOVED IT!!!!!

Easy Guacamole

Easy Guacamole

2 ripe CA avocados
1 small jalapeno, seeded and finely minced (or 1/2 large)
1 medium shallot, finely diced
1 large clove garlic, finely minced
1 1/2 tsps chopped fresh cilantro
1/2 medium roma tomato, seeded and diced
1/2 tsp coarse sea salt
fresh lime juice (~2tbls or 1/2 a lime)

Cut avocados in half, remove pit, and spoon avocado into a mixing bowl. Smash avocado until it reaches your desired consistency, a little chunky is best. Add in remaining ingredients and gently stir to combine.

Taste and adjust salt as needed.

Note: To store left over guacamole place the pit in the guacamole to help it stay fresher longer.

  5. Seriously, I’m sure that the difference was that you participated in the ripening process. When you ripen them yourself at home and eat them when they are perfect, not over-ripe, the flavor is amazing! Getting them direct from the farmer allows you to know exactly when they were picked.   9. I hated avocados until a few years ago. My tastes have changed so much in my 30s! I put jalapenos in mine too, but no shallots…red onions for me (Chipotle style). :)

  12. I love avocados, but I agree that they are sort of an acquired taste. I find that they are super versatile and a fun way to boost the fiber content a bit in some meals that aren’t necessarily the most fiber-rich.

  13. I was always an avocado hater too….until last year. My sister fell in love with them and convinced me that I needed to give them another try. I decided to make a ‘quick & dirty’ version of guacamole…just avocado, with lots of lime juice, cilantro and salt and pepper (I love cilantro). Well, after that I was hooked! I still don’t eat them in anything but guacamole, but….baby steps!

  16. Awesome recipe Wendy!! I made this today for a family bbq that I hosted, and served it with my favorite fresh salsa… I barely got to taste them both before they got devoured. I wish it was easier to make, though… I don’t know how I’ll go back to my usual guacamole after eating this.

    • Hmmm….what was hard about it? Shallots?

      • Ya.. it looked good, and I liked what was in it, so it was worth trying. I guess it wasn’t so much hard, as time consuming. I can make mine in about a minute, and it doesn’t involve any chopping. It did take me a minute to find the shallots at my grocery store, but worth it. I should have looked for them a long time ago.

        • Lol. Yes…lots of chopping. John made it for us today and cheated by using the herbs in a tube stuff (saved him from chopping cilantro and garlic). Tasted just the same! I’m glad you liked it!
