Throw together is quick Chicken and Corn Soup using leftover chicken for a simple, yet hearty weeknight supper.
My hubby and kids are HUGE soup fans. Soup’s just okay for me, but I try my best to please everyone during the week and a good soup will make them all happy. So, I’m always trying to make a new soup for supper and I always love a meal that is easily made from pantry staples. It makes it easy to keep everything on hand for a quick supper on busy nights.
I, sometimes, serve this soup with these super yummy Cheddar Muffins that I shared with y’all recently. Everyone agreed that they went together really well together.
But we had a little mishap in the kitchen. I was letting Gavin (my 2yo) help me with supper and he decided that it would be funny to slide the lid of my favorite soup pot off the counter and onto the flour. Of course it shattered into a bazillion pieces. I’m so bummed….I loved my Emile Henry Flame Top Stew Pot.…probably more than I should have. I’ve had it for many years, so it was well seasoned and made the best soup. I told John he better figure out how to get me a replacement lid for Christmas. I’ll keep my fingers crossed….

We are big soup and stew fans too. This looks delicious. I cringed when I read your lid shattered :/ I hope you can find another that fits it. It is getting cooler here so soup has been on the menu more. I might try this one.

This looks delish and easy enough for me to do one night after work! I think I will pencil it in for Monday – one of our crazy nights!!

Years ago, my friend told me that her coffee cup was guarantee to not break. I didn’t believe her and asked her if I could test that theory. She agreed so I dropped her beloved coffee cup on the tile floor and it shatter into several pieces. We were both standing their with our mouths open! I still haven’t found that coffee cup to replace it….
Oh no! That’s horrible. 🙁
Where did you get that soup bowl?? I want 6 of them!
LOL! I found them at the grocery store. I shop at Fry’s which is a Kroger store. Hope you find them!
That looks yummy! I really need to make more soups this year!
This looks good! I have a favorite Chicken Corn Chowder, but I like the looks of this one too! We have a huge amount of creamed corn in our pantry for some reason, I think I’ll have to make this today since I have some shredded chicken that needs to be used up. (This would freeze well, right???)
I didn’t have any left to freeze, but I don’t see why it wouldn’t freeze well.
