My kids have been real troopers the last couple years with my crazy new food allergies. It wasn’t just me that was affected, but the whole family and my kids have learned to be really careful around me when eating dairy. I was feeling like they were missing out on some good homestlye mac & cheese (they’ve been making the easy 3 min stuff in a cup), so I decided to get creative and figure out how to make this super easy for me and super tasty for them. I ended up putting my rice cooker to the ultimate test to create this One Pot Macaroni and Cheese dish for the kids.
Hubbyman and both kids gave it two thumbs up each and proceeded to finish off the pot. Should I tell them how easy this was or keep it to myself? I bet I could get at least one of them to do the dishes for me. Hmmm..now that’s a great idea!
One Pot Macaroni and Cheese in a Rice Cooker
- 2 cups macaroni noodles
- 2 1/2 cups water
- 1 tsp salt
- 1 can evaporated milk
- 3/4 cup processed cheese, cubed
- 1 cup shredded white cheddar cheese
- 1/2 tsp garlic powder
- 1/2 tsp mustard powder
- 1/4 tsp black pepper
- 1/8 tsp paprika
- Add pasta, water, and salt to rice cooker and cook on white rice setting for 25 minutes. Open lid and add remaining ingredients to the pot and continue to cook for an additional 10-15 minutes or until cheese has melted.
- Note: If sauce isn't as thick as you'd like combine 1 tsp cornstarch with 2 tbls water and add to the pot. Stir. Close lid and let sit on warm for a for a few minutes to thicken.
