I admit it! I love quinoa! And so should you!

It’s a perfect superfood and that means it is packed full of some amazing health benefits…but healthy doesn’t mean boring or flavorless. Try adding orange and scallions to your quinoa for a totally amazing side dish. My whole family loves this recipe….yes…even the kiddos.

Orange Scallion Quinoa

I never had quinoa until I was until. Truth be told…I had never even heard of it before either until I was about 30 and took a little local cooking class with a friend.

Orange Scallion Quinoa

Yield: 4
Prep Time: 5 minutes
Cook Time: 30 minutes
Total Time: 35 minutes

This Orange Scallion Quinoa is a perfectly flavored side dish goes well with fish or even a grilled steak

Ingredients

  • 1 cup quinoa
  • 1 orange
  • 3 scallions
  • salt to taste

Instructions

  1. Remove zest from half of the orange and set aside. Cut orange in half and juice with a citrus juicer.
  2. In a medium saucepan, with a lid, bring 2 cups of water plus orange juice to a boil over high heat. Add quinoa, cover and let simmer over medium heat for 12 minutes. Remove from heat, add orange zest and scallions, and fluff lightly with a fork. Return lid and let stand 15 minutes.
  3. Season to taste and serve warm.

    I love using Quinoa in so many dishes i make! I made a taco casserole the other day using Quinoa and it was meatless, i used beans instead, and surprising even my kids loved it.

    My daughter in law made a quinoa salad for a family get together a few months back it was delicious, me and the hubby tried it and it was great, we are waiting for another family get together and she said she will make some more. Her and her family are gluten free and we have to be very careful about what we all eat, and Bob Adams gives us some new options.
