Move over BLT...these bacon tacos are even better than you are!

Move over Bacon, Lettuce, & Tomato Sandwiches…there is a new kids on the block!  This is not a taco shell made out of bacon, but the most unbelievable taco you’ve ever had.  This taco is filled with hot, crunchy, salty bacon.

A couple months ago Hubbyman and I went to a huge food truck festival and one of the trucks served up a version of these bacon tacos.  Hubbyman took one bite and proclaimed that I needed to make these at home in the next week.

So, our fun food truck outing turned into me dissecting the bacon tacos that he was swooning over.  I couldn’t eat the ones served, but it didn’t take much to figure out how to make them so everyone in the family could enjoy them.  And since I’m a good wife {well..I was on this day} I served these bacon tacos for lunch the following Saturday.

Personally, these tacos would make a great breakfast, lunch, or supper. In fact, we may or may not have eaten these for all three meals in one day.  I’m just sayin’…bacon is amazing!  I would say it was the perfect food but it would only reach perfection status if had zero calories.  And as of now, I have not found any bacon with zero calories!

Bacon Tacos

The bacon is hot and crispy.  The coleslaw is cold and creamy.  The salsa is crunchy and spicy.  Could there be a better taco?  I really don’t think so!

Bacon Tacos
 
Ingredients
  • 8 or 16 corn tortillas
  • 1 package bacon
  • coleslaw, your favorite recipe
  • pico de gallo
Instructions
  1. Cook bacon in the oven in a single layer, according to this method. While bacon cooks prepare pico de gallo.
  2. When bacon is completely cooked, remove from oven and let cool and drain on paper towels. Break bacon into large pieces.
  3. Warm tortillas in the microwave for about 20 seconds, top with bacon, coleslaw, and pico de gallo.
  4. Note: Some people like to double up the tortilla, the choice is yours if each taco uses one or two tortillas.
  5. Makes 8 tacos

    I love this easy recipe! It looks so good! I got some bacon marked down at the store and I want to try out this awesome recipe for my family! I like the freshness of the onions and tomatoes on top!
