This Lava Flow Smoothie Recipe is a killer knock off of my favorite coffee shop’s summer drink!  Last summer, I think I had one of these every day from the coffee shop down the street to my house.  Of course that wasn’t the best thing for my bank account {or my waistline}, so it was probably a good thing when they were phased out in the fall.

Unfortunately, around January the bug hit me and I desperately needed one {or two or three}.  So I made a date with my VitaMix and set  out on a journey to create my own version at home.  It didn’t me long to figure out how to make a version close enough at home to curb those cravings and get me through until they make a return this summer.

Basically, a Lava Flow is a pina colada with some strawberry puree mixed in.  I make virgin pina coladas often as an after school snack for the kids and honestly I love them so much without rum that I’ve never actually tried it with rum.  {Shocking! I know!}

The kids both gave my version of a lava flow smoothie two thumbs up each.  Hubbyman did not get to try it the first few times we made it because the kids and I ended up drinking the whole batch ourselves, so I had to make a special batch one night just for him.  Of course, he drank the whole thing and didn’t share it with us.

Lava Flow Smoothie
  • 8 oz strawberries, washed, hulled, and halved
  • ¼ cup sugar
  • 1½ cups pineapple juice
  • ½ cup cream of coconut
  • 2-3 cups ice
  1. Combine strawberries and sugar in blender and mix until pureed completely. Remove from blender and set aside. Rinse blender with water.
  2. Combine remaining ingredients in the blender, starting with only 2 cups of ice. Blend on high and continuing adding ice until you reach your desired thickness.
  3. Meanwhile drizzle strawberry puree in 2 tall glasses and then gently pour the smoothie over the strawberry puree. Add a fancy straw and enjoy!
