The theme for my #12bloggers group this month was gourmet grilled cheese sandwiches which posed quite the problem for this dairy allergy gal. So, I put on my thinkin’ cap and decided goat cheese would be fun ( I did briefly consider a vegan sandwich). I tried a few different versions before settling on this one…which by the way is AH-MAZ-ING!

So, put on your big girl panties and don’t turn your nose up to this before you try it. You are going to thank me…

Grilled Goat Cheese & Strawberry Sandwiches

Warm honey goat cheese, fresh sweet strawberries, and peppery baby arugula are all you need for this scrumptious bite of heaven.

Grilled Strawberry and Goat Cheese Sandwich

Grilled Strawberry and Goat Cheese Sandwich

Yield: 2
Prep Time: 5 minutes
Cook Time: 4 minutes
Total Time: 9 minutes

Put down the cheddar and heat up the frying pan! Grab some goat cheese and make up a few of these bad boys. Now, go eat a Grilled Strawberry and Goat Cheese Sandwich.

Ingredients

  • 4 slices sandwich bread (gluten free if desired)
  • 2 tbsp honey goat cheese
  • 6 strawberries (washed, tops cut off, and cut in half)
  • 1/2 cup arugula
  • butter (regular or dairy free)

Instructions

  1. Heat large skillet on medium heat. Butter one side of each slice of bread and then spread goat cheese on one slice of bread (on the non-buttered) side, top with strawberries and arugula.
  2. Move half with toppings to skillet and add the top slice of bread (butter side up).
  3. Cook until lightly golden brown on one side, then flip, and repeat on second side.
