My Peach Mint Rum Popsicles are for the adults only. Send the kids to bed early tonight and enjoy one of these frozen treats.

Peach Mint Rum Popsicles

I’ve been a popsicle making machine all summer long and it’s time for me to make one that is just for me {well, and Hubbyman too}. I’ve “suffered” through boring kool-aide popsicles, leftover smoothie popsicles, and so many more…you won’t believe how many. This popsicle is not only “adult” in flavor combination, but adult in the fact that it has a bit of white rum.

I was sitting in my friend’s kitchen a couple months ago and she served up the most amazing cocktail. It was fruity and light and refreshing. I couldn’t stop thinking about it and how it would make a perfect popsicle on one of our super hot summer days. I just loved that cocktail, but I think I love this popsicle more than the cocktail.

Summer is the perfect time to make these popsicles, peaches (or even nectarines) are perfectly ripe, my citrus trees are bursting with tons of fruit, plus my garden is overflowing with tons of fresh mint. Even if don’t grow any of your ingredients, since they are in season during the summer they are usually on sale and perfectly ripe too.

Of course, you could make it without the rum, but why would you want to. It’s so good with that little bit of rum. Trust me….so SO good! And the mint and lime are very refreshing. Peaches make everything better in my world….so I love this combination.

I love these cute popsicle molds. It was perfect for Hubbyman and I to share a late night treat while the kids were in bed. Of course, I may have eaten both halves myself…just sayin’!

Peach Mint Rum Popsicles

Peach Mint Rum Popsicles

Yield: 8
Prep Time: 10 minutes
Total Time: 10 minutes

These rum popsicles are the perfect frozen treat for grown-ups! Feel free to omit the rum to make them kid-friendly.

Ingredients

  • 2 limes, juiced
  • 2 peaches, peeled and pitted
  • 1/4 cup sugar
  • 6 mint leaves
  • 1/2 cup water
  • 2 tbsp white rum

Instructions

  1. Put all ingredients into a blender and puree until smooth.
  2. Pour mixture into popsicle molds and let freeze all day or overnight. Enjoy once they are completely frozen.
