Fresh, colorful produce tempts all your senses and creates this amazing Vegan Cobb Salad with Honey Poppy Seed Vinaigrette.
Have you been enjoying all the recipes from my Outdoor Oasis Party? We seriously had so much fun and so much good food. I absolutely in love with this salad. I’ve been craving a good ol’ cobb salad with creamy ranch dressing. Mmmmm…doesn’t that sound wonderful?!?! I knew what ever I came up with had to satisfy that craving, so I stood in the produce section until the ingredients spoke to me. {Please tell me I’m not the only one that does that?}
I don’t have any other photos of this salad because I really wasn’t sure I would share the recipe, but we’ve made it three times since my party two weeks ago….it’s amazing! So now of course, with only one photo, I’m sharing this salad. For the party I laid it out all pretty just like a cobb salad, but when it’s just Hubbyman and I digging in, I just throw it all in together because we just can’t wait.
The best part about this vinaigrette is that I used it for my fruit salad too! {There is one minor change, but it’s in the directions.} I literally made the vinaigrette for the fruit salad then added one more ingredient to what was left to create the salad dressing! I love double duty recipes. My fruit salad was just fresh fruit..nothing special. I opted to add the vinaigrette because I had one party goer that was allergic to citrus, so I couldn’t just squeeze fresh lemon or lime on the fruit.
- romaine lettuce
- peeled and roughly chopped cucumber
- shredded carrots
- diced red onion
- chopped black olives
- sliced avocado
- grape tomatoes
- pepitas (or pumpkin seeds)
- 1/3 cup oil (vegetable, canola, olive)
- 1/3 cup honey (or agave nectar)
- 1 tbls cider vinegar
- 2 tsps poppy seeds
- 1/2 tsp salt
- 1 tbls dijon mustard
Place lettuce on a large platter and arrange the other vegetables evenly around the top in a pattern.
Add all the dressing ingredients in a mason jar.** Shake well to combine.
**omit the dijon mustard if using for fruit salad. I made up this exact recipe and used a little bit for the fruit salad, then added in the dijon and used the rest for the salad.
