Flourless Peanut Butter Cookies

A couple years ago my friend started making Flourless Peanut Butter Cookies and I could not stop eating them. Seriously, I think I ate the whole batch.  These are the easiest and best peanut butter cookies that I have ever had…and they only have 3 ingredients!  YUM!  Plus they are naturally gluten free and dairy free.


These cookies were the inspiration for my Halloween Witches Brooms Cookies and also my Flourless Nutella Cookies!

Flourless Peanut Butter Cookies
 You really won’t believe how easy these cookies are to make.  No mixer needed.  Just throw everything in a large bowl and mix up with a wooden spoon.  Even my 6 year old can make these cookies with no problem.  Due to the amount of peanut butter needed in the recipe, I usually use the cheapest peanut butter I can find.

Peanut Butter Cookies

1 cup peanut butter (your choice)
1 cup sugar
1 egg

Preheat oven to 350 degrees.  Combine all ingredients and mix well.  Drop by the teaspoon onto greased cookie sheets.  Use a fork dipped into sugar to press into cookies.  Bake for 10-12 minutes (don’t brown them and careful cuz they will burn quickly…ask me how I know).

Makes about 18.

  8. My kids and I made this together this evening. I was a little sceptical at first because with the lack of flour, I figured these cookies would lose all fluffiness. But no! Surprisingly, these cookies were perfect. They were just a tad crip on the bottom and so chewy and peanut-buttery in the center. I LOVE peanut butter cookies, and the peanut flavor was strikingly stronger in this recipe than any other I’ve tried….which is a great thing of course! My husband is not a peanut butter enthusiast like muah, (more of a chocolate chip kind of guy), and he LOVED them! Thank you so much for sharing this recipe. This is definitely the easiest, fastest peanut butter cookie recipe I have found, and will be one to stick to when that craving hits again!

  11. We shape them like lady fingers and dip half of them in chocolate…or use a whisk and drizzle chocolate over them, tastes just like a Reese’s.

    I’d forgotten all about this recipe, I probably haven’t made them in 20yrs but they always come out perfect! I use super chunky peanut butter and they were wonderful, I’m going to make some tonight!

  15. I’ve made these a couple of times and the mixture is very crumbly and I have to use my hands to try to make them into rounds. What am I doing wrong? I use an electric hand mixer and no substitutions.

  16. Every time I’ve made these they turn out great, just like the real version! Except when I burn them :/ So simple and no one would ever know it is even GF thanks for sharing
