A couple years ago my friend started making Flourless Peanut Butter Cookies and I could not stop eating them. Seriously, I think I ate the whole batch. These are the easiest and best peanut butter cookies that I have ever had…and they only have 3 ingredients! YUM! Plus they are naturally gluten free and dairy free.
These cookies were the inspiration for my Halloween Witches Brooms Cookies and also my Flourless Nutella Cookies!
Peanut Butter Cookies
1 cup peanut butter (your choice)
1 cup sugar
1 egg
Preheat oven to 350 degrees. Combine all ingredients and mix well. Drop by the teaspoon onto greased cookie sheets. Use a fork dipped into sugar to press into cookies. Bake for 10-12 minutes (don’t brown them and careful cuz they will burn quickly…ask me how I know).
Makes about 18.
That almost just as easy as opening up a package of Betty Crocker ones…haha! I love pb cookies and always forget about them!

We tried a very similar recipe last week and they came out like peanut butter soup! I still ate them, but they were not pretty at all. I'll have to try this!

My kids and I made this together this evening. I was a little sceptical at first because with the lack of flour, I figured these cookies would lose all fluffiness. But no! Surprisingly, these cookies were perfect. They were just a tad crip on the bottom and so chewy and peanut-buttery in the center. I LOVE peanut butter cookies, and the peanut flavor was strikingly stronger in this recipe than any other I’ve tried….which is a great thing of course! My husband is not a peanut butter enthusiast like muah, (more of a chocolate chip kind of guy), and he LOVED them! Thank you so much for sharing this recipe. This is definitely the easiest, fastest peanut butter cookie recipe I have found, and will be one to stick to when that craving hits again!
