Giant Patriotic Cookie Cake

I love baking and taking fun treats to potlucks, parties, and BBQs. We went to a party this week and I baked up this Giant Patriotic Cookie Cake for everyone. I think I might have eaten 1/4 of this thing all by myself. I probably could have eaten the entire thing, but I used the little self-control I have and shared with everyone.

This Patriotic Cookie Pizza can be made in a round pan more like a cake/pizza shape as seen below. Or I like to make it in a rectangle pan to give it more of a flag shape. Either way works, so just use whatever pan you have on hand.

Giant Patriotic Cookie Cake Shopping Guide

This looks really impressive and perfect for the summer holidays, but I promise it is super easy. There are a few specialty tools that will help get the job done easier. Here they are:

  • favorite recipe,  gluten free cookie mix, or store-bought dough
  • pizza/cookie pan or 9X13 baking sheet
  • frosting tips 1M and 14, I highly suggest having 2 1M tips
  • frosting bags
  • red and blue gel food coloring

How to Decorate A Giant Cookie Flag Cake

  • Mark off 1/3 in the left corner by using a toothpick to score a little line in the cookie. This section will eventually be your blue section.
  • Use a ruler to score out straight-ish lines. The American has red stripes at the top and bottom so make sure to plan that out when scoring your lines. Don’t worry about making the correct number of stripes….we are just going for the general idea. Not an exact copy.
  • Use an offset spatula to spread on the blue frosting in the corner.
  • Then pipe red and white stripes, with the 1M tip, in a zig zag form. This is so quick and very forgiving if you mess up. You will want 2 tips, one in it’s own piping bag, so you can quickly go back and forth.
  • Lastly, use tip 14 to add stars to the blue. Make them uniform, but don’t worry about getting the correct number.

Giant Patriotic Chocolate Chip Cookie

Cook Time: 40 minutes
Additional Time: 1 hour
Total Time: 2 hours

Make this Giant Patriotic Cookie Cake for all your summer parties from Memorial Day to 4th of July to Labor Day.  It's so easy to make {promise} and it will the highlight of the dessert table!

Ingredients

  • 2 batches of chocolate chip cookies, prepared as directed, but not baked
  • Frosting:
  • 1 cup shortening
  • 2 tbls warm water (2-3)
  • 1 tsp almond extract
  • 1 lb confectioners sugar
  • red & blue gel food colors

Instructions

  1. Preheat oven to 350F and line pan with parchment paper (let a little slightly hang over the edges) that is lightly sprayed with nonstick cooking spray.
  2. Prepare cookie mix according to package/recipe instructions. (You will probably need two mixes to fill the pan.) Spread cookie dough evenly in pan, pressing all the way to the edges. Bake for 20 minutes and then check every few minutes until cookies are baked and almost fully set in the middle. Depending on the recipe and brand, this could take 20-50 minutes.  Just watch closely.
  3. Remove from oven and let cool completely.
  4. Remove cookie from pan using the parchment to lift it out.

Frosting

  1. Beat together shortening, 1 tbsp of warm water, and almond extract until smooth and creamy. Beat in the sugar gradually on a low setting. Scrape sides of bowl as needed.
  2. Mixture will be very thick. After all sugar is incorporated, add 1-2 more tablespoons of warm water and beat at medium/medium-high speed for 1-2 more minutes. Adding more warm water will continue to thin the frosting consistency and bring down the sweetness. Add as much as you like to get the appropriate flavor and consistency. Be careful because a little goes a long way.
  3. The frosting can also be made several days in advance and stored in an airtight container in the refrigerator. Bring to room temperature, then mix well before using. Leftovers should be refrigerated.
  4. Divide frosting into 3 bowls. Color one bowl red, one bowl blue (you won't need much blue), and leave the third one white.
  5. Before decorating, remove parchment paper and place on a pretty serving platter.  Mark off your flag pattern (see notes in this post before you begin)
  6. Get the look by using Decorating Tube 1M fitted into a piping bag for the red & white stripes and tip 14 for the stars.
  7. Keep covered after frosting has dried to keep the cookie from drying out before serving.  Can be made a  day in advance.

Notes

Note: I have made this both traditional and gluten free/vegan cookie dough and both work perfectly!  Just watch your baking time and make sure it's set it the middle.

The frosting is already gluten free/vegan so no changes needed.
