Muffin Tin Lunch

I first heard about doing this about 6 years ago when I heard Dr. Sears speak about nutrition for kids.

His idea was mostly for snacking, but my kids love it so much that I started doing it for lunch. It’s like a healthy version of that overly processed kids lunch pack you find in the deli section at the supermarket…only I control what goes in it and it is a lot cheaper.

Mexi-Cali Meat Burritos

Mexi-Cali Meat Burritos

If you haven’t figured it out by now, my family loves almost all Mexican food. I found this recipe over at Food.com many years ago and we fell in love with it. I’ve adapted the recipe just a bit.

This makes a TON and freezes extremely well. We easily get 3-4 meals out of this one. I freeze it in zip-top baggies in amounts that my family generally would eat in one meal. I love that it has the beans built into the recipe.

Fruit Parfaits

My kids are always begging for dessert. And I don’t like giving it to them more than once a week or so. Sometimes, I am able to talk them into a piece of fruit for dessert…but not often.

Slow Cooker Candy

Yes, I said it…I made candy in my slow cooker. I was skeptical at first and I totally ruined my first batch somehow, but the 2nd time worked perfectly! It was really, really good!

I send half of it to hubbyman’s office where it was devoured before lunch and the second half was placed on the tables of a Valentine’s Day party…none of it made it’s way back to my house. I think that says it all. This will be my new go-to recipe for parties and cookie exchanges. Read More…
