There is something about ice cream that brings my family together.  My Father-in-Law is seriously addicted to this stuff and my kids have inherited his affinity for the it.  Needless to say, we spend way to much time (and money) visiting ice cream shops.  One of the kids’ favorite is the Cake Batter Ice Cream from Cold Stone Creamery.  So I figured, why not give it a shot and make my own copycat version.

Gone are the days of raw egg in the mix.  Gone are the days of trying to cook the egg in the mix without scrambling the eggs.  This recipe is only 6 ingredients and requires ZERO cooking time.  Just mix it up, add it to the frozen ice cream maker container, and you’ve got ice cream!

Have I mentioned before how much I love my ice cream maker?  Seriously….I use this baby so much and recommend it to everyone.  I love my Cuisinart Ice Cream Maker.  I don’t have the top of the line, just an old version that is a total work horse.  I’ve had it for a lot of years and she’s still going strong!  There is nothing quite like homemade ice cream.

I can’t think of a better way to fit in my family’s daily dairy needs than with Cake Batter Ice Cream.   My kids don’t usually just drink milk and since they are still growing I like to make sure they get enough in other forms….and ice cream totally fits the bill!  Hey, I’m trying to be a cool mom! Don’t judge me!

Tons of cake flavor in this super easy Cake Batter Ice Cream. You won't believe that it's only 6 ingredients!

1 cup whole milk, well chilled
1/2 cup granulated sugar
2 cups half and half, well chilled
2 tsps pure vanilla extract
3/4 cup cake mix
1/4 cup rainbow sprinkles

Place freezer bowl of ice cream maker into the freezer. Freezer for 12-24 hours.

In a medium bowl, whisk the milk, sugar, half & half, and vanilla until the sugar is dissolved. Stir in cake mix, making sure there are no lumps.

Pour mixture into the freezer bowl and let mix until it has thickened (about 25-30 minutes). During the last 5 minutes, pour in rainbow sprinkles.

Remove ice cream from freezer bowl and place into a separate container. Place ice cream into the freezer to further harden for several hours or overnight.

The huge storm that is about to hit the rest of the country flew threw Arizona yesterday.  But before it left, Phoenix was covered in a dusting of snow.  <Shocking> Snow in the Desert …..it’s not unheard of, but extremely rare.  By around 8pm the majority of the Valley had at least some snow.  Friends were sharing photos of snowball fights, scary driving conditions, hail, thunder and lightning.  It was an interesting weather day for sure.

Around lunchtime, I got a text from a friend who said the snow on the mountains was lower than she had ever seen.  About once every winter, the Superstition Mountians east of Phoenix get a light dusting of snow on the peaks.   I didn’t think much about it, but then Hubbyman called and said I had to see it.  So, I bundled up my little man and headed out for a 30 minute drive to see it and snap some photos.

There are several mountain ranges on the east side of the Valley and all had snow.  It was such an amazing and beautiful site.   It was fun to see everyone out taking pictures of the snow, if they only knew that just a few hours later, pretty much everyone would have snow on their front porch.

When I was growing up in Texas, it snowed every winter and my mom would make us Snow Ice Cream.  I have such fond memories of having it and have had a couple occasions to make it for my kids while we were on winter vacations.  I don’t know the original source for the recipe.  I don’t have a photo for the ice cream as I didn’t actually get to make any…not enough good snow down here (but I don’t think you need a picture, it’s pretty easy).

1 gallon snow
1 cup white sugar
1 tbls vanilla extract
2 cups milk

After the snow has fallen, find a place with fresh clean snow (not compacted, brown, or yellow) and scoop snow into a large, clean bowl.

Add in sugar and vanilla to taste, then stir in just enough milk for the desired consistency. Serve at once.

Can be stored in the freezer, but it will freezer hard. It's best eaten right away.

Build Your Own Ice Cream Cake

A couple weeks ago, I hosted an end of summer Messy Party for my kids and a few of their friends.   Usually, I’m a super control freak and make the cake as perfect as I can get it, but once in a blue moon I let my hair down and let the kids go for it!  So while this is not the best looking cake…

It tastes fantastic!

And the kids had a blast!

There really isn’t a “recipe” per se, but more of a technique…it’s so easy, but does take some time since all the layers have to frozen as they go into the pan.  Oh and the pan….a springform pan is a must.

Start with a layer of crushed oreos mixed with melted butter, pressed into the springform pan.

(20 oreos crushed and mixed with 3 tbls melted butter)

Heat up a small jar of hot fudge (minus the lid) and pour about 3/4 of the jar over the oreo crust.

Freeze!

I cheated (shhh…don’t tell) and used a store bought vanilla loaf cake.  Feel free to bake up your own.  Make sure that it completely covers the fudge topping layer.

Freeze for an hour!

Thaw a 1/2 gallon carton of chocolate ice cream so that it is spreadable, but not melted.

Spread evenly over frozen cake layer, then freeze until it’s totally frozen.

Next, using a 1 gallon container of cookies & cream ice cream, scoop out pretty scoops and place on top of chocolate layer.

Freeze again until solid.

Let kids decorate with what ever toppings you desire.

Nuts, Sprinkles (dye-free for us), Hot Fudge, Caramel, Whipped Cream, Cherries

Freeze again if it got too melty, otherwise; pop the cake out of the pan and…

EAT!

It’s hot here…like my flip flops feel like they are melting and sticking to the ground when I’m outside hot!  So, I’ve given up my traditional hot coffee in the morning for iced coffee!  Besides, I prefer iced coffee anyway.

Most of the time I like to make my own foo-foo coffee drinks when I can.  However, sometimes we are rushed out the door in the morning with swim lessons, summer movie fun, and early morning play dates so I don’t always have time to make my own.

I was so excited to try the new International Delight Iced Coffee….I really wanted to try the vanilla flavor, but my store was out…so I opted for the original flavor.  I figured I could add my own flavors if I wanted to.  After my first glass, I knew I had to make some ice cream with it!  It pretty much had everything already in it and would be an easy dessert on these 115 degree days!

I added the half & half just to up the fat content a little.  I wanted to make sure it would be decadent enough for dessert.  Feel free to use whole milk or heavy cream…whatever you normally have on hand.  Use an automatic ice cream maker to make it even easier….don’t forget to pre-freeze your inner container!  Okay, really…this is more like an ice milk than an ice cream, but it’s still really good!

2 1/2 cups International Delight Iced Coffee (Original Flavor)

1/2 cup half & half (whole milk or heavy cream)

1/3 cup chocolate chips, melted

Follow instructions of your machine for making ice cream.  Add coffee and half & half to ice cream maker.  When ice cream is 5-10 minutes from being done (it should be somewhat thick at this point), drizzle in melted chocolate.  Let ice cream continue turning until done.

Serve immediately for a soft serve style or transfer to a freezer safe container and freeze for a couple hours to harden.

Festive Ice Cream & Cookie Bowls

Just over a month ago, I finally left the comfort of my home and hung out with some food bloggers at Camp Blogaway!  I had a great time and made some fabulous new friends.  A few of us decided it would be fun to create patriotic dessert dishes with the help of Wilton, one of the fabulous camp sponsors.

As you know, we are like 99% dye free at our house, so I needed a tasty treat that would be patriotic, but still have a little red, white, and blue flare.  As I was trying to decide, my kids decided we needed some ice cream…homemade, with blueberries….aren’t the precious ones so demanding sometimes?!?!

But they had a great idea and then I had a great idea!  Strawberry, Almond, and Blueberry ice creams all served up in a tasty cookie bowl.  Then the hard part was trying to decide what type of cookie to make!

Gavin wanted sugar cookies, Kaylynn wanted chocolate chip cookies, hubbyman didn’t care…so much for his help.  So, I decided on both.  And I thought I would add some fun holiday sprinkles to the sugar cookies just to add a little more color.  Most of the cookies I made were just regular cookies, but the sprinkles were so pretty….sometimes I just have to have the extra color! (My daughter was super happy with her dye free version.)

Ice Cream:
2 cups whole milk
1 can sweetened condensed milk
1 tsp vanilla extract
1 cup strawberry puree (or blueberry puree)

Sugar Cookies:
1 stick (1/2 cup butter), softened
3/4 cup sugar
1 egg
1/2 tsp salt
1/4 tsp almond extract
3/4 tsp vanilla extract
1 1/3 cup flour

Ice Cream:

Combine all ice cream ingredients in an ice cream maker. Follow freezing instructions on your machine. Transfer finished ice cream into a freezer safe container and freezer for several hours to harden.

*Almond Ice Cream: replace vanilla extract with almond flavoring. Add in 1/2 cup chopped almond pieces when ice cream almost done.

Sugar Cookies:

Preheat oven to 350F. Spray Ice Cream Cookie Bowl pan with nonstick cooking spray.

In a large bowl, cream butter and sugar with electric mixer until light and fluffy. Beat in egg and extracts. Add salt and flour. Mix well.

Roll out dough on a floured surface to about 1/8 inch thick. Cut 4 1/2 inch circles in the dough. Drape a circle over each of the molds, pressing to conform to pan.

Bake 11-13 minutes or until golden and firm. Cool for several minutes and gently remove cookie to finish cooling on a cooling rack.

Makes 6 bowls.

Did you know that today is National Strawberry Shortcake Day? I had no idea! Seriously…who comes up with this stuff? I don’t care, cuz I love Strawberry Shortcake! My favorite way is to have it with angel food cake and tons of whipped cream.

As if you didn’t know that already!

I knew I wanted to make something to celebrate the day, but my creative juices just haven’t been flowing recently. And then a couple days ago, I started craving a really good homemade milkshake. BAM! It hit me! I remembered hearing about a chocolate cake milkshake….where you actually put a slice of cake in the milkshake. Why not add all the wonderful goodness of strawberry shortcake into the blender and see what would happen.

Let me just tell you….it was magical!

The flavor of the angel food cake adds a nice subtle tangy flavor to the milkshake. Of course, using a great ice cream and fresh Driscoll’s strawberries helped make it wonderful!

1 1/2 cups vanilla bean ice cream
1 1/2 cups fresh strawberries, halved
1/2 cup milk
1 1/2 cups cubed angel food cake

Put first 3 ingredients in the blender and process on high until well combined (1-2 minutes). Add in cake and process on low just until everything is blended nicely (30sec-1min). Serve and enjoy!

Yesterday, I received an email in my inbox from one of my best friends requesting that I quickly (apparently she had a deadline) come up with a little healthier version of the Dole Whip that everyone loves at Disney World.  I’ve only been to Disney World once when I was really little and so I have idea what this tasty concoction actually tastes like.  I haven’t seen it at DisneyLand…maybe it’s there, I don’t know.   Anyway, I’ve heard from a few people that it’s really good.

All the recipes that I came across call for canned pineapple.  Why?  Why not real, fresh, sweet pineapple?!?!  And I took out the sugar and used a little agave nectar instead.  It’s healthier and a low glycemix index food.  I used my VitaMix to make most of this dessert; however, a BlendTec or food processor would work and an ice cream maker is needed!

For such short notice, I think I did okay.  Not the best picture, but the kids were on top of me begging for their drinks and licking the counter where it spilled a little. I could not keep those little ones away from it.  That is the downfall of blogging and making yummy new treats.  Those darn kids…they just don’t understand a photo shoot and getting a great picture.



Pineapple Whip

2 pineapples, peeled and cored*
1 lime, juiced
2 tbls agave nectar
1 1 /2 cups whole milk, half & half, or heavy cream
1/2 tsp vanilla

Blend pineapple with lime juice and agave nectar in heavy duty blender or food processor until smooth. Pour into a bowl, cover, and store in the refrigerator until well chilled.

In blender or processor, process cold cream and vanilla until thick and creamy. Add in pineapple mix and blend well.

Pour into ice cream maker and follow manufacture's instructions for making ice cream. When it's done, place in a freezer safe container and allow it to harden for an hour or two before serving.

*If you have VitaMix or BlendTec, use the core too! It adds lots of great nutrients!

At least once a year, my family loads up the car and heads to Hubbyman’s Uncle’s cabin in the woods.  It’s such a getaway and a great change of scenery.  Luckily, they have their cabin with all sorts of books, videos, and toys.  On our recent getaway, I started digging through their collection of recipes.  I found this recipe buried in a pile of newspaper cutouts.

My candy bar of choice is a Snickers, so I knew I had to try it!  The original recipe used low cal, low fat ingredients to make it more diet friendly….I tried it with all regular ingredients.  It was pretty good…not sure I like the crunch of it though.

Next time, I’m leaving out the grape nuts and maybe adding peanuts instead!

 

Almost Snickers Ice Cream Dessert

12 oz vanilla ice cream, softened
1 cup cool whip, softened
¼ cup crunchy peanut butter
1 small pkg  choc pudding mix
3 oz Grapenuts cereal

Mix together in a large bowl, then spread in an 8×8 pan.  Freeze for several hours.
